This isn't really iced tea. It's an herbal infusion, chilled and served over ice.

An herbal infusion is a large quantity of a dried herb, steeped in hot water for a long time. I started making daily herbal infusions about four months ago and have noticed significant improvements in my energy level, anxiety and stress, digestive health, and sleep cycle. I prefer to read about herbs and health from Susun Weed, who inspired my current menu of daily infusions. In a typical week, I drink nourishing infusions of stinging nettle leaf, oatstraw, burdock root, comfrey leaf, and red clover. I purchase my herbs from Mountain Rose Herbs and am very satisfied with the quality of their products.

Red clover is said to have anti-cancer effects. It can be used as a remedy for fertility issues and problems with the lymphatic system, as well as to boost the immune system. Red clover infusion tastes very similar to black tea. I love to watch its progress as it brews. The bright, green leaves pop with color upon initial contact with the hot water and the hue of the infusion morphs as it steeps from gold to deep, dark amber.


Red Clover "Iced Tea" (Herbal Infusion)
Place approximately one cup (or 1 oz by weight) of dried red clover herb into a quart jar. Pour in boiling water to fill the jar, put the lid on, and let it steep for 4-10 hours, or overnight. Strain the herb, squeezing it to get all of the liquid out. Compost the spent herb. Pour the tea back into the jar and place it in the fridge to chill. Any leftover tea should be stored in the fridge to prevent spoilage. Serve chilled with ice, lemon, and some mint. Or, like me, you can add some of the lemon balm trying to dominate your herb garden. You may also choose to add mint before steeping. 

Yesterday, I enjoyed this tea along with a fried green tomato, which the fella and I devoured together at the kitchen table. I mentioned making this dish and within an hour, he had not so subtly placed a green tomato, freshly picked from our garden, on the table beside me. Look how cute and green it was! How could I resist?


A simple breading of whole wheat flour, blue cornmeal, salt, pepper, and paprika. The egg wash consisted of an egg and some homemade almond milk. The result was a light, crunchy, fresh snack that tasted like summer.

  4. I think garden fresh tomatoes are in my top 3 favorite things about summer. The fried and green version looks perfect! I'm jealous of your garden - mine is not going well this year!

    I'd also love to hear more about your adventures with herbs. I just started seeing a holistic health practitioner who is also an herbalist. It sounds like a fascinating world.

  5. I am so intrigued by these herbal infusions you've gotten into since I've recently ditched caffeine and am exploring the world of herbals teas. I'd be interested in more information on what you've tried and what you've learned about these as well. Do you think some have a greater benefit to energy level vs sleep cycle vs anxiety, etc or is just the blend of them all that have this holistic benefit for you?
    Also, fried green tomatoes are the bomb and I can totally picture your fella "not so subtly" placing the tomato at your side ;)

  6. Hey, friends! Thank you for all of the comments! I will work on a post about the specific benefits of the herbs I've been taking. A brief summary: I started my herbal journey with stinging nettles and it packs an energy punch! Great for getting the day going. The oatstraw has a variety of benefits and I've felt them - It calms nerves, can help stabilize mood, and is good for digestion (it's also used to increase libido if that's something you're looking for). On days when I drink it, I feel less anxious, sometimes even feeling a lasting peace. Comfrey is a controversial herb but I've been using it with no problems, except that it makes me very sleepy! The burdock root I incorporated as part of a skin-clearing regimen. Combined with a few other things, it appears to be effective. I'll definitely work on some more thorough posts about my experience with these herbs. Thanks again for the support!! I love the feedback!
